MEXICAN SWEET POTATO SOUP

SERVES: 4 PREP / COOK TIME: 15 MIN. / 25 MIN. VEGAN / GLUTEN-FREE / NUT-FREE This soup is a brilliant all-rounder, great for lunch and dinner. Serve with crusty bread, rice and tortilla chips if you need extra carbs. Double it and freeze the soup for slow days. INGREDIENTS • 1 tablespoon olive oil• 2 red onions, finely chopped• 1 bunch of coriander, leaves picked & stems chopped• 2 tablespoons chipotle chilli paste• 5¾ cups (750g) sweet potato, peeled & grated• 6⅓ cups (1.5L) vegetable broth• 2 limes• salt• 1 avocado, sliced METHOD 1. Heat the olive oil over medium heat in a large saucepan and fry three-quarters of the onion and the coriander stems for 4–5 minutes until just soft.
