THE ZESTY CITRUS
Limes are hybrid citrus fruits and there are several varieties, categorised in two groups: acid or sour and acidless or sweet. The tangy fruit is often used in cooking to accentuate flavour and is integral in Southeast Asian and Mexican cuisines. The most commonly grown lime variety is the Persian or Tahitian lime (Citrus × latifolia), but there are other familiar varieties such as Key lime (C. × aurantifolia), which is rounder and more acidic, and kaffir lime (C. hystrix), with a distinctive flavour and leaves that are used more than the fruit. There are also Australian examples such as native desert lime (C. glauca) and finger lime (C. australasica).
