Throughout history, some cultures have considered cabbage a poor man’s food while others prized it as something special. My Irish husband finds colcannon — boiled cabbage and ham on a bed of mashed potato — homely and comforting. Unfortunately, I can’t cook it because the smell turns my stomach! He contents himself with a bowlful whenever we return to Ireland while I prefer to serve cabbage raw in salads, braised in stews or fermented. When and where cabbage was domesticated varies depending on which history book you’re reading and whether you’re considering heading or open-leaf (non-heading) cabbages. For the purposes of this article I’m focusing on heading cabbages, which are believed to have originated in Europe around 1000 BCE.
