SERVES 2 A signature dish from my restaurant, and a customer favourite. Elegant, refined and almost ridiculously easy to make, this dish is proof that simple things are often the best. Just remember to put the dried seaweed in to soak the day before. Native ingredients used snapper, mahi mahi or red emperor, native ginger, coastal succulents and native greens, kelp INGREDIENTS • 400g firm white-fleshed fish fillets, such as snapper, mahi mahi or red emperor• 2 tablespoons Shaoxing wine or dry sherry• 2 tablespoons finely shredded native ginger• generous handful mixed coastal succulents & native greens, such as crystal ice plant, karkalla, sea blite, sea purslane & saltbush leaves• 2½ tablespoons macadamia oil Kelp Broth • 30g kelp, soaked in 200mL water overnight• 4cm piece native ginger, thinly sliced•…
