When someone says “eat your greens”, what comes to mind would be the likes of spinach, kale and silverbeet — covered by Jennifer Stackhouse on page 46 — but there’s so much more to the leafy green plant palette than the traditional ones we all know so well.
When we live in an environment with such varied and sometimes harsh growing conditions, particularly during our summer months when these traditional greens fail to thrive, it’s a no-brainer to try varieties that are longer lasting, have flexible growing requirements and are more heat and drought tolerant.
Let’s look at another batch of lesser-known nutritious, easy-to-grow plants that will make delicious additions to dishes that require “greens”, whether salads, stir-fries, soups, stews or sandwiches.
