Fattoush

One of the most famous Lebanese salads and a staple on the mezze table, fattoush is made from mixed vegetables and toasted pita bread. Serves 4 INGREDIENTS • 1 cup toasted pita bread squares • ½ cup olive oil • 2 cups chopped romaine lettuce • 1 cup wild rocket • 1 cup chopped tomato • 1 cup chopped cucumber • ½ cup sliced spring onion • ½ cup chopped green capsicum • ¼ cup chopped mint leaves • ¼ cup chopped parsley Dressing • 1 tsp sumac • 1 tsp salt • 1 tsp minced garlic • 1 tsp lemon juice • 2 tbsp pomegranate molasses • 1 tbsp apple-cider vinegar METHOD In a medium bowl, soak the pita squares in half the olive oil.
