Grown as a substitute for the unrelated French tarragon, Mexican tarragon will fill a corner of the summer and autumn herb garden with clusters of golden flowers buzzing with bees. Herbs are usually thought of as small plants but not Mexican tarragon, which can grow to 70cm high — and I’ve seen it even taller. It’s larger and more robust than French tarragon and its flavour is also stronger, with a distinct aniseed taste. Despite sharing a common name, these are two quite different plants. French tarragon (Artemisia dracunculus) is native to parts of Europe and prefers mild growing conditions with regular moisture and shade from the hot summer sun. MEXICAN TARRAGON HAS BETTER RESISTANCE TO HEAT AND HUMIDITY THAN FRENCH TARRAGON BUT CAN BE AFFECTED BY FROSTY CONDITIONS. Expect…
