Ob zum Picknick, beim Lunch oder als leichtes Abendessen: Der Sommer ist Salatzeit. Die schwedische Köchin Ylva Bergqvist verrät Rezepte für jede Gelegenheit

„Natürlich gibt es keine Sterne für den weltbesten Salatkoch, aber ich möchte behaupten, dass ich bei Salaten ziemlich gut bin“, sagt die Köchin, Foodstylistin und vielfache Kochbuchautorin Ylva Bergqvist von sich. Sie stammt aus Schweden, lebt inzwischen aber hauptsächlich in Portugal. „Ich liebe Salate einfach. In ihnen steckt jede Menge gesundes Grün und sie passen zum Alltag genauso wie zu Partys.“ Wie so oft im Leben kommt es bei der Zubereitung auf die gekonnte Mischung und ein bisschen Mut an, so Ylva. „Salate können ein unglaubliches Geschmackserlebnis sein – wenn man nicht nur auf Eisbergsalat und Dosenmais setzt.“ Die Basis für ihre Rezepte sind deshalb nicht nur Klassiker wie Rucola oder Kartoffeln, sondern auch mal Graupen, Zucchini oder Zitrusfrüchte.
