Beer-marinated pork neck SERVES TWO TO FIVE 4 to 5 pork neck chops 5ml pepper 3 cloves garlic, minced 1 sprig rosemary, leaves only, removed and roughly chopped 10ml cumin 3 to 4 sprigs thyme, roughly chopped 80ml beer 60ml extra virgin olive oil, plus extra for frying • Mix all the ingredients together, except the chops. • Place the chops in a sealable bag, then pour in the marinade, seal the bag and shake it up so the chops are evenly coated in the marinade. Leave them in the fridge for at least four hours, but preferably overnight. • Take the bag out of the fridge about an hour before cooking so that the chops can come to room temperature. • Get a pan up to a medium to…
