Hjemmelavede blommer i madeira (12 stk.) 6 blommer svarende til ca. 350 g kød125 g sukker + 1½ tsk.1 tsk. vaniljesukker½ dl vand1 tsk. melatin½ dl madeira Overtræk: 400 g marcipanLidt flormelis til udrulning500 g mørk chokolade Skræl blommerne, og skær dem i tern. Bring blommekød, sukker, vaniljesukker og vand i kog i en lille gryde. Lad blandingen simre i 8-10 minutter, til blommerne er møre. Blend marmeladen med en stavblender. Tilsæt melatin og 1½ tsk. sukker. Kog videre ved svag varme i 20-25 minutter, til konsistensen er som gelé. Tilsæt madeira, og smag marmeladen til.
