NOTE VÉNITIENNE Dans les bonnes adresses de Vérane, il y a L’Eau à la Bouche, à la Malmousque, créée par Rodolphe Bodikian. Ce pâtissier qui travailla au Louis XV, à Monaco, à La Tour d’Argent, à Paris, avant de s'installer quelques temps à Venise, y découvrit ces pizzas magnifiques, couvertes de mesclun et d’herbes fraîches. De retour à Marseille, il applique l’idée à L’Eau à la Bouche, pizzeria pas banale qu’il a depuis cédée à Emmanuel Salze, un confrère du quartier. Le secret? Une pâte légère, faite avec son propre levain par Aladji, qui repose au frais vingtquatre heures avant de virevolter dans les mains de Giovanni, le pizzaïolo depuis 2011.
