ELLES SURPRENNENT PAR LEUR IMMENSITÉ ET LEUR DIVERSITÉ. ELLES SONT BORDÉES PAR L'ÉTANG DE BAGE-SIGEAN. CELUI DE LEUCATE N'EST EN CONTACT AVEC AUCUNE RIVIÈRE, IL EST DONC PROTÉGÉ DE LA POLLUTION ET Y SONT ÉLEVÉES DEPUIS QUARANTE ANS DES HUÎTRES. UN VILLAGE D'OSTRÉICULTEURS SUR PILOTIS SE DRESSE AINSI SUR LE CHENAL.

La plage des Chalets, quant à elle, fouette l'imaginaire. Bordée de petites maisons sur pilotis, l'impression d'être au bout du mode gagne. Dans les terres, de drôles de cabanes très colorées s'alignent sur un bras de l'étang de Leucate. Des ostréiculteurs, souvent de génération en génération, y élèvent des huîtres appellation Cap Leucate à la chair fine et au goût…
