SUR UN TERROIR VIEUX DE MILLIONS D'ANNÉES, FORMÉ DE PLAQUES ROCHEUSES PROVOQUÉES PAR L'ÉRUPTION DES PYRÉNÉES, DANS UN SOL ARGILO-CALCAIRE, ELLES PUISENT LEUR FORCE. LES VINS DU DOMAINE DES HAUTES TERRES SONT RECHERCHÉS POUR LEUR MINÉRALITÉ. ILS OUVRENT AUSSI UNE VOIE, DANS CES MONTAGNES DE LA HAUTE VALLÉE DE L'AUDE, D'ADAPTATION AU RÉCHAUFFEMENT CLIMATIQUE.

VIN D'ALTITUDE Gilles Azam, fils de vigneron de Limoux, commence en 1999 avec un hectare, aujourd'hui trente-sept hectares sont sous sa garde. «Je voulais travailler des vins propres et nature.» Le choix de l'altitude lui permet de conserver des dates de vendanges début septembre et évitent les jus déséquilibrés de raisins mûrs trop tôt. «La minéralité nous est amenée par deux éléments conjoints: le climat pyrénéen et le terroir qui, il y a 50 millions d'années, était recouvert par l'océan Atlantique. Les marnes ocre qui portent les vignes en gardent la mémoire, avec ces gisements de fossiles de petits coquillages, turitelles et nummulites.» Chardonnay, chenin et mauzac acquièrent une pureté. Geneviève Azam, qui a rejoint l'ascension du domaine depuis treize ans, baptise désormais les vins: Air de Paradis, Céleste, Panorama.…
