Les amateurs de bulles apprécient de plus en plus le camaïeu rose qu’offre la Champagne: cerise, framboise, fraise, orangé… à chacun sa teinte et son goût. «La progression des ventes est réguliète depuis une vingtaine d’années, pour atteindre 10% des volumes en 2022», détaille Jean-Christophe Delavenne, vice-président du Syndicat général des vignerons de la Champagne. Une longue marche que cette reconnaissance d’un nectar dont la teinte originelle remonte aux premières effervescences du vin des sacres, au XVIIIe siècle. Ce vin était alors sans nul doute produit par macération. Celle-ci imprime sa couleur au jus lors d’une courte infusion de la peau des raisins noirs, de 24 à 72 heures selon la teinte et le style recherchés.
