RÈGNE SOUTERRAIN Chez les Tournayre, la truffe est une affaire de famille depuis quatre générations. Mais si Pierre, le grand-père, était un « truffeur des garrigues », Michel, lui, a fait de ses truffières un laboratoire à ciel ouvert. « J'ai planté un arboretum où l'on teste les essences: chênes, charmes, tilleuls, noisetiers… Des chercheurs et trufficulteurs de tous les pays viennent partager nos résultats. » En saison, Michel part « caver » (récolter) avec ses filles Margot et Lucie, et bien sûr leurs chiens, dressés pour détecter la fameuse odeur. Savoir empirique, la trufficulture progresse dans les connaissances et les pratiques, notamment la taille et la gestion de l'eau. Mais la truffe a ses caprices, et le changement climatique l'impacte.
