VIE DE CHÂTEAU Fonscolombe fut le foyer de la famille de Saporta, dont les membres, amis de Rabelais et de Darwin, s'illustrèrent dans la médecine et la botanique. Le château, auquel une patiente restauration a rendu tout son éclat, reste imprégné de cet esprit étincelant. Ses salons tendus de cuir de Gênes et papiers peints chinois, ses plafonds ornés de gypseries et de lustres monumentaux abritent désormais un hôtel, conçu comme une vaste maison de famille. Le parc, planté de 180 espèces, est l'héritage du botaniste de la lignée. Le restaurant L'Orangerie, doux et feutré l'hiver, prend ses quartiers d’été à l'ombre du grand cyprès.
