GRAINES VERTUEUSES Henri de Pazzis à 20 ans rejoint à Saint-Rémy le couple d'artistes René Dürrbach et Jacqueline de la Baume-Dürrbach, disciples du peintre Albert Gleizes, fondateur du cubisme, adepte d'une philosophie de vie en osmose avec la nature. Il débute son apprentissage artistique puis s'adonne au potager. Visionnaire, il fonde Pronatura, numéro un de la distribution de légumes bio. En 2012, il retourne à la terre avec une pratique d'agriculture sans chimie et des blés anciens. Même réflexion pour la fabrication de son pain: moulin avec meule en pierre, four à bois, levain.«Mon pain prend 48 heures, les autres se fabriquent en deux heures, avec levure et 60 adjuvants.
