Quinze fois par heure, les pains de terre de 30kg épousent les formes de grands moules en plâtre. Puis les ouvriers lissent les marques, la bordure au doigt, à l'éponge, parfois émaillent le col, aspergent une patine, avant de tamponner un symbole navarrais, la signature de l'entreprise et la leur.
