VENT CALIFORNIEN De retour de Los Angeles après une dizaine d'années, Olympe Rico, sœur de Marie Ceccaldi, fondatrice de Casanera, entend faire un « café californien à la corse, avec beaucoup de cru, de la couleur et sain ». Elle parle probiotiques et fabrique ses propres aliments fermentés, ses pâtes au blé complet encore moulu dans un des derniers moulins corses, sa charcuterie. Pendant plus d'un an, elle s'est consacrée au « sourcing »: maraîchers dans la plaine du Peri, brasseurs artisanaux, boulanger, fromager qu'elle trouve en Laurence Luciani, à Bastelica. Elle a installé son restaurant dans une des plus vieilles boutiques d'Ajaccio. En tout, 30 tonnes de gravats ont été retirées, laissant apparaître les murs de pierres et les plafonds voûtés en briques, qui contrastent avec un comptoir jaune…
