Sweet as Pie

FROZEN BLUEBERRY CREAM PIE Makes 1 (9-inch) pie 1½ cups graham cracker crumbs6 tablespoons granulated, divided5 to 6 tablespoons unsalted butter, melted1 cup fresh blueberries¼ cup water1 tablespoon light corn syrup¾ teaspoon cornstarch⅛ teaspoon salt½ teaspoon lemon zest1 (8-ounce) package cream cheese, softened¾ cup confectioners’ sugar1½ cups heavy whipping cream½ teaspoon vanilla extractGarnish: fresh blueberries 1. Preheat oven to 350°. Spray a 9-inch pie plate with cooking spray. 2. In a large bowl, combine graham cracker crumbs and 3 tablespoons granulated sugar. Add melted butter, stirring until moistened. Using the bottom of a measuring cup, press mixture into bottom and up sides of prepared plate. 3. Bake for 7 minutes. Let cool completely on a wire rack. 4.
