ChopChop Salad

The great thing about this salad, aside from the fact that it’s absolutely delicious and endlessly adaptable, is that it’s made of all different textured vegetables, which makes it great for learning how to slice, chop, and dice. Kid Recipe Tester Linnea added cheddar cheese cubes to hers. “I loved it,” she wrote in her notes, “and so did my family. They said it was very fresh and had a nice texture.”

| ADULT: YES | HANDS-ON TIME: 45 MINUTES | TOTAL TIME: 45 MINUTES | MAKES: 4 SERVINGS KITCHEN GEAR Cutting board Sharp knife (adult needed) Medium bowl Measuring cups Measuring spoons Tongs or salad servers INGREDIENTS 1 English cucumber (the kind wrapped in plastic), chopped, or 1 regular cucumber, peeled, seeded, and chopped1 cup cherry or grape tomatoes, halved1 red bell pepper, cored, seeded, and chopped1 cup green beans, stem ends snapped off, cut in half2 tablespoons unseasoned rice vinegar (or any vinegar you like)½ teaspoon salt Black pepper to taste INSTRUCTIONS 1. Put all the ingredients in the bowl and toss well with the tongs. Taste the salad. Does it need more vinegar, salt, or black pepper? If so, add it and taste again. 2.
