Simple Sautéed Peapods

We love to cook snow peas and sugar snap peas just until they turn bright green and tender. If you prefer, you can cook them at high heat until they blister and char a little bit. It’s up to you!

❚ ADULT: YES ❚ HANDS-ON TIME: 15 MINUTES ❚ TOTAL TIME: 15 MINUTES ❚ MAKES: 4 SERVINGS KITCHEN GEAR Measuring spoonsLarge skilletWooden spoon or tongsPot holders INGREDIENTS 2 teaspoons olive or vegetable oil1 pound snow peas or sugar snap peas, ends and strings removed (see page 5)½ teaspoon salt INSTRUCTIONS 1. Put the skillet on the stove, turn the heat to medium, and add the oil. When the oil is hot, add the snow peas and cook, stirring occasionally, until they are bright green and starting to wilt, 3 to 5 minutes. 2. Stir in the salt and serve right away. GET CREATIVE Sprinkle with toasted sesame seeds before serving. Swap in toasted sesame oil for the olive or vegetable oil.
