Chopped Greek Salad

We love the tangy flavors and crunchy textures of a Greek salad, and this chopped version has all that and more. If you don’t have or don’t want the lettuce, just skip it and you’ll have made a traditional Greek salad called horiatiki. Kid Recipe Tester Amine likes to add sliced red onions to this salad.
Chopped Greek Salad
❚ ADULT: YES ❚ HANDS-ON TIME: 30 MINUTES ❚ TOTAL TIME: 30 MINUTES ❚ MAKES: 4 SERVINGS KITCHEN GEAR Cutting boardSharp knife (adult needed)Measuring cupsMeasuring spoonsLarge bowlTongs or 2 large spoons INGREDIENTS 1 large or 2 small heads romaine lettuce, chopped1 English cucumber (the kind wrapped in plastic), diced, or2 regular cucumbers, peeled and diced1 pint cherry tomatoes, halved1 large bell pepper (any color), seeded and diced¼ cup chopped fresh flatleaf parsley and/or ¼ cup chopped fresh dill½ cup crumbled feta cheese½ cup pitted olives (any kind)Greek Vinaigrette (or another dressing from pages 18–19) INSTRUCTIONS 1.
