Crunchy Romaine Salad

Instead of croutons, we’re topping this salad with toasted breadcrumbs. You’ll probably love them so much you should double the recipe and use them on other salads too. Caesar Dressing (page 18) is the obvious choice here, but feel free to dress it however you like.

Put the skillet on the stove, add the oil, and turn the heat to low. When the oil is hot, add the breadcrumbs and salt and mix well. Cook, stirring from time to time, until golden, about 5 minutes.
