Congee

Congee is the Chinese name for a savory porridge-like soup. A similar Korean dish is called juk. Both are made with rice that sort of explodes as it cooks, and while that may sound strange, it’s delicious. In China they eat it for breakfast, but with add-your-own toppings, it also makes a substantial dinner.
