Scaling a Recipe Sometimes, you need to adjust the size of a recipe so that it can feed more people or fewer people. Recipes for sauces or dressings like vinaigrettes often use ratios in order to make the recipe easier. Our Classic Vinaigrette (page 28) ratio is 2:1, which means for every 2 measures of oil, there is 1 measure of vinegar.
