This really easy but flavorful dinner can be assembled quickly, transferred to the oven, and cooked while you set the table and prepare your sides.

❚ ADULT: YES ❚ HANDS-ON TIME: 20 MINUTES ❚ TOTAL TIME: 1 HOUR ❚ MAKES: 3-4 SERVINGS KITCHEN GEAR Cutting board Sharp knife (ADULT NEEDED) or kitchen scissors Grater or zester Measuring spoons Large bowl Large spoon Rimmed baking sheet or large ovenproof skillet Tongs or spatula Pot holders INGREDIENTS 6 bone-in, skin-on chicken thighs (about 2 pounds), trimmed of fat1 tablespoon olive or vegetable oilGrated zest and juice of ½ lemon2 garlic cloves, peeled and sliced1 teaspoon dried rosemary, thyme, or basil½ teaspoon salt½ teaspoon black pepper INSTRUCTIONS 1.
