What really sets fideo seco apart from traditional spaghetti with tomato sauce is the way that it’s cooked. Instead of cooking the noodles in water and then topping them with tomato sauce, the noodles are cooked in the tomato sauce. As a result, the noodles are completely covered in sauce, so the flavor and color are much richer. And of course, breaking up the spaghetti is super fun.
