Fish filling 15g butter 2 shallots, roughly chopped 2 medium carrots, scrubbed and diced 3 celery fingers, thinly sliced 2 garlic cloves, peeled and thinly sliced 5ml ground coriander 2.5ml ground pepper 500ml full cream milk 450g smoked haddock 450g hake fillets Cheese sauce 30g butter 40g cake flour 5ml Dijon mustard 2.5ml fine salt 100g grated cheddar cheese Mash topping 1.2kg potatoes, peeled and cut into chunks 30g butter 100ml milk 2.5ml fine salt 15ml chives, chopped To make the fish filling, melt the butter in a deep saucepan.
