INGREDIENTS METHOD 500ml (2 cups) basmati rice, soaked overnight 5ml (1 tsp) instant yeast 250ml (1 cup) coconut milk, lukewarm 60ml (¼ cup) desiccated coconut 125ml (½ cup) sugar 2.5ml (½ tsp) cardamom, ground Drain and dry the soaked rice. Place the rice with the rest of the ingredients, into a blender and blend until smooth. Place the mixture into a bowl, cover and place in a warm place to rise and double in size. Heat a large frying pan with water. Use a heatproof egg tray or golf ball-sized foil cups and spray with non-stick food spray. Spoon some of the mixture into the cups and place the cups in the poaching water. Cover with a lid and steam for about 10 minutes or until the mixture is set.…
