Marriott Hotels draws on AI technology to halve food waste by 2025

MARRIOTT HOTELS has rolled out Winnow's food waste reduction technology across 53 of its hotels in the UK, Ireland and Nordics. Winnow AI, which comprises a camera, weighing scale and AI chip, sits over a food bin and scans food when it's thrown away by kitchen teams. The machine provides a real-time reading detailing the amount of food discarded, while a full report of daily waste is issued the following morning. Anna Pazdera, executive chef at London Heathrow Marriott Hotel, said: “The insights we're getting allow us to make immediate adjustments in the kitchen, which not only helps us reduce waste but also gives us the opportunity to get creative with surplus ingredients.” Examples include turning banana peel into pulled pork for vegetarian burgers, while boiled-down pineapple peel is used…
