THE TWO MICHELIN-STARRED Dinner by Heston Blumenthal at Mandarin Oriental Hyde Park, London has launched a sustainable lunch menu, taking inspiration from 17th-century recipes that minimised waste. “The Luncheon” menu features dishes including ragoo of pigs ears on toast with oxtail, onion, mustard and lemon, inspired by The Compleat Housewife by E Smith (1727), as well as salt cod with parsnip, pickled lemon and horseradish, taken from The Experienced English Housekeeper by E Raffald (1769). Expect experimental cuisine and fascinating storytelling. The menu is priced at £59 (US$75), with the option of wine pairings at £49 (US$62), and is available until summer of this year.
