CHOCOLATE & WALNUT PAVLOVA WITH MADEIRA & TANGERINES Serves 8Preparation time 40 minsCooking time 2 hrs 4 medium egg whites220g caster sugar½ tsp white wine vinegar80g dark chocolate, plus extra grated chocolate to serve100g walnuts FOR THE FILLING 300g tangerines, peeled and pith removed, roughly chopped100ml madeira450ml thickened cream STEP 1 For the filling, toss the chopped tangerines with the madeira in a bowl until well coated, then set aside.
