GRAINS ARTICHOKE, TOMATO, AND CHICKEN BOWLS 30 mins Makes 4 servings 2 Tbsp olive oil4 skinless, boneless chicken breasts (about 680g total)2 punnets cherry tomatoes170g jar marinated artichoke hearts, drained½ cup Greek vinaigrette450g pouch microwavable brown rice and quinoa blend STEP 1 Preheat oven to 200°C/ 180°C fan. In a 25cm ovenproof frypan heat 1 Tbsp of the oil over medium-high. Season chicken with salt and black pepper. Add chicken to frypan. Cook 4 minutes until browned on bottom. Turn chicken and transfer frypan to oven. Bake about 6 minutes or until done. STEP 2 Meanwhile, in a 25cm non-stick frypan heat remaining 1 Tbsp oil over medium-high heat.
