Wenn im „Tantris“ ein Zweisternemenü serviert wird, wer wirkt alles hinter den Kulissen daran mit? Dahinter stehen 55 Menschen. Von der Rezeption über Köche und Patissiers bis zu Service-Mitarbeitern, Sommeliers, Bartendern … Wir backen selbst Brot, kaufen Tiere im Ganzen ein, verarbeiten wirklich alles, machen Schokolade und Pralinen selbst, legen Früchte ein … Das braucht ein großes, perfekt eingespieltes Team, das ist -im positiven Sinne – ein großer Aufwand. Auf eine solche Logistik können ambitionierte Hobbyköche nicht ansatzweise zurückgreifen. Wenn man daheim ist, ist natürlich alles viel kleiner, da muss man anders denken. Aber der Ansatz ist der gleiche: Alles fängt beim Produkt an, das ist für mich das A und O. Und man muss kein Sternekoch sein, um sich die Zeit zu nehmen, zweimal pro Woche auf den Markt…
